From exclusion to nutritional design: how science, ingredients and consumer behaviour are redefining healthier foods
The food industry has entered a phase in which the meaning of “healthy food” is becoming more complex, more technical and, in many cases, more contradictory. On the same supermarket shelf, consumers can find products that proudly remove ingredients — lactose, gluten, sugar, fat, caffeine, cholesterol — next to products that add ingredients with equal emphasis: proteins, fibres, vitamins, minerals, omega fatty acids, bioactives and functional compounds. What was once a niche response to medical needs has become a mainstream commercial language. “Free-from” and “rich-in” are no longer marginal claims; they are now among the most visible expressions of how consumers interpret wellbeing, control and food choice.
The FoodTech Village webinar Free-From and Enriched Foods: Innovation for the Next Generation of Functional Products explored this transformation from several complementary perspectives. Introduced and moderated by Prof. Sebastiano Porretta, the session brought together Vish Prakash, globally recognised food scientist and former president of IUFoST, Monia Floridi, CEO of New Flavours – Italian Sensations, and Gordon Grimm, Director Innovation Center Ingredients at CSM Ingredients. Together, they examined the scientific, sensory, technological and market forces that are reshaping the category.
The central message was clear: the future of free-from and enriched foods will not be built simply by removing or adding ingredients. It will depend on the ability to design food systems that are nutritionally meaningful, technologically stable, sensorially convincing, affordable, safe and aligned with new consumer expectations.
The paradox of modern food choice
The webinar opened with a provocative observation: to an external observer, the contemporary food market might appear almost paradoxical. Consumers are willing to pay more for products from which something has been removed, while also paying more for products in which something has been added. Alcohol-free beer, caffeine-free coffee, sugar-reduced formulations, lactose-free dairy alternatives, protein-enriched snacks and fibre-rich bakery products all reflect the same structural change: the product is no longer judged only by what it is, but also by what it avoids and what it promises to deliver.
This shift is driven by several overlapping factors. Medical requirements remain important, particularly for people living with allergies, intolerances or specific metabolic needs. But beyond these groups, free-from and enriched products increasingly address lifestyle choices, preventive health attitudes, personalised nutrition, sport and weight management, ageing populations, sustainability concerns and the desire for greater control over diet.
The challenge is that these expectations do not always align easily with food technology. Removing sugar affects sweetness, texture, bulk, preservation and browning. Reducing fat alters mouthfeel, lubrication and aroma release. Increasing protein may introduce bitterness, astringency or graininess. Adding fibres can modify viscosity, water binding and digestive behaviour. Replacing animal-derived ingredients may change colour, structure and flavour. In other words, every nutritional claim has a technological consequence.
Food architecture, not just formulation
Vish Prakash’s keynote moved the discussion beyond the conventional language of ingredients and nutrients. His approach placed food within a broader system that begins in agriculture and extends through processing, digestion, physiology and sustainable consumption.
One of the most important concepts in his lecture was “food architecture”. A food product is not simply a list of components; it is a structured matrix in which ingredients interact physically, chemically and biologically. This structure determines how nutrients are released, how bioactives are protected, how texture is perceived, how flavour is delivered and how the body responds during digestion.
This view is particularly relevant for enriched foods. Adding a vitamin, a peptide, an omega-3 fatty acid or a probiotic is not enough if that compound is degraded during processing, lost during storage, destroyed in the stomach or poorly absorbed in the intestine. The success of an enriched food depends on bioavailability, release kinetics, digestive stability and physiological relevance.
Prakash also stressed the need to consider traditional knowledge alongside advanced technology. Many traditional food systems have survived for centuries because they combine ingredients, processes and eating habits in ways that respond to climate, culture and physiology. Today’s innovation should not dismiss that accumulated intelligence. Instead, it can reinterpret it through food science, biotechnology, data analytics and precision nutrition.
This perspective changes the meaning of functional food. The question is not only “which function can we claim?” but “how can we design a food matrix that delivers a meaningful benefit safely and sustainably?”
Personalised nutrition beyond personal preference
Another key point concerned the widespread misunderstanding of personalised nutrition. In many consumer contexts, personalisation is treated as a matter of taste: the foods I like, the flavours I choose, the lifestyle I identify with. Prakash invited the audience to look deeper. True personalised nutrition is not simply preference-driven; it is connected to physiology.
Different individuals process nutrients differently. Age, metabolism, gut microbiota, health status, digestive tolerance, life stage and genetic background all affect how food is used by the body. A product designed for an elderly consumer may need different textures, release profiles and nutrient densities from one designed for a young adult, an infant, an athlete or a person recovering from illness.
This approach has important implications for free-from and enriched products. It suggests that the next generation of functional foods will need to move beyond broad generic claims and towards more targeted solutions. Products for glycaemic control, satiety, gut health, healthy ageing, protein enrichment or mineral delivery will need to be designed around both consumer expectations and biological mechanisms.
Prakash’s reflections on gastric emptying, gelation, encapsulation and slow nutrient release brought food innovation closer to the logic of controlled delivery. In this sense, food science is beginning to borrow some conceptual tools from pharmaceutical research, while remaining grounded in everyday eating experiences.
The sensory challenge of healthier products
If the keynote established the scientific framework, Monia Floridi’s intervention addressed one of the most practical difficulties of the category: taste.
Free-from and enriched foods often carry sensory penalties. Protein enrichment may bring bitter, metallic, beany or astringent notes. Fibres can modify mouthfeel. Plant-based matrices may introduce green or cereal-like flavours. Sugar reduction lowers sweetness and can expose off-notes that were previously masked. Fat reduction affects aroma persistence and texture. Alternative raw materials can create profiles that consumers perceive as less familiar or less balanced.
This is where the flavour industry becomes a strategic partner in formulation. Flavours are not merely used to “add taste”. In modern free-from and enriched products, they perform several technological and sensory functions. They can mask undesirable notes, rebalance flavour perception, enhance sweetness without additional sugar, reinforce the identity of the product and support the overall sensory experience.
Floridi highlighted the role of masking flavours and functional flavour systems, particularly in formulations containing proteins, fibres or alternative ingredients. In a plant-based cheese made with almond milk, for example, the base may not naturally taste like almond in a pleasant way; it may instead present bitterness or imbalance. A flavour system can help define whether the final product is perceived as dairy-like, nutty, chocolate-based, savoury or completely different.
The same applies to industrial processing. Pasteurisation, sterilisation, cooking, extrusion and other thermal or mechanical treatments can reduce or modify aromatic compounds. A flavour must therefore be designed not only for the recipe, but for the process. pH, water activity, fat content, temperature, processing stress and shelf-life requirements all influence flavour performance.
Microencapsulation and process-driven flavour innovation
The discussion on flavour also moved into technology. Innovation in flavour production is not limited to the creation of new aromatic profiles; it increasingly involves extraction methods, carrier systems, spray drying, microencapsulation and process-specific delivery.
Microencapsulation, for example, can help protect volatile compounds during processing and storage, releasing them more effectively at the moment of consumption. This is particularly relevant in products that undergo heat treatment, extrusion or long distribution cycles. The goal is not only to make a product taste better immediately after production, but to preserve sensory quality throughout shelf life.
This connects directly with the broader theme of the webinar: the performance of a functional product depends on its entire system. A flavour cannot be separated from the matrix. An enriched ingredient cannot be separated from digestion. A claim cannot be separated from consumer acceptance. Each element must be engineered in relation to the others.
Clean label as a baseline, not a differentiator
Gordon Grimm’s contribution focused on how ingredient claims are reshaping food and beverage choices. One of his strongest points was that clean label is no longer a premium differentiator in many markets. It is becoming a baseline expectation.
Consumers increasingly look for short, transparent, understandable ingredient lists. They want to know not only what is in a product, but also why it is there. Every ingredient must “earn its place”. At the same time, consumers are often overwhelmed by too many claims, too much technical language and an excess of competing health narratives. This creates an interesting tension: the market demands more functional performance, but also more simplicity.
The “free-from” logic has therefore changed. It is no longer only about allergies or intolerances. Avoidance has become a form of health behaviour. Low sugar, low calorie, low alcohol, gluten-free, lactose-free, additive-free or fat-reduced products often speak to consumers who define health through what they choose not to consume.
But Grimm also suggested that the next phase belongs to “rich-in”. If free-from claims are becoming the baseline, enriched products may represent the next wave of growth: rich in fibre, high in protein, fortified with healthy fats, designed for satiety, gut health or metabolic support.
GLP-1 therapies and the new grocery basket
One of the most relevant market signals discussed during the webinar was the rise of GLP-1 receptor agonist drugs and their potential impact on food consumption. These therapies, increasingly used for weight management and metabolic health, influence appetite, satiety, gastric emptying and food reward. Their effect is not limited to individuals taking the medication; they may also reshape broader consumer expectations around portion size, nutrient density and food functionality.
According to Grimm, the impact is already visible in markets such as the United States, where consumers using GLP-1 therapies tend to reduce consumption of indulgent, high-sugar, high-fat and calorie-dense products. At the same time, demand increases for nutrient-dense foods, high-protein options and fibre-rich formulations that support gut motility and satiety.
This trend creates both risk and opportunity for food manufacturers. Categories built around impulse, indulgence and high calorie density may face pressure. Conversely, bakery, snacks, beverages and prepared foods capable of delivering protein, fibre, texture and pleasure in a more nutritionally efficient format may gain relevance.
The implications go beyond weight-loss users. Consumers who stop using GLP-1 therapies may continue to look for products that help maintain new eating patterns. This could make protein and fibre enrichment even more central to future product development.
Protein, fibre and texture: the new technical triangle
The practical examples presented by CSM Ingredients showed how protein and fibre enrichment are becoming increasingly sophisticated.
Protein enrichment is not simply a question of increasing grams per serving. Plant proteins, especially pulse-derived proteins, often present flavour and texture challenges. Off-notes, poor solubility, sandy mouthfeel or graininess can compromise consumer acceptance. Ingredient innovation therefore focuses on treated and micronised proteins that reduce particle size, improve mouthfeel and make high-protein claims possible in bakery, beverages, pizza and other everyday applications.
Fibre is following a similar path. Soluble fibres are gaining attention because of their role in gut health, satiety and texture. Highly soluble, micronised fibre ingredients can support “high in fibre” claims while contributing to mouthfeel, viscosity or sugar replacement. Fibre syrups and semi-solid fibre systems can partially replace sugar in applications such as ketchup, bars, cakes or non-alcoholic drinks, delivering technological functionality as well as nutritional value.
Here again, the webinar returned to a recurring principle: taste and texture remain decisive. Consumers may want healthier foods, but they do not accept poor sensory quality as the price of nutrition. Grimm summarised this effectively through the idea that taste is king and texture is queen. In the free-from and enriched market, both must be protected.
From claims to credibility
A mature functional food market cannot rely only on claims. As consumers become more informed, brands must demonstrate coherence between promise, formulation and eating experience. A protein-enriched product must be palatable. A sugar-reduced product must still offer body and satisfaction. A clean-label formulation must remain stable and safe. A free-from product must not create a weaker nutritional profile by replacing removed ingredients with poorer substitutes.
This is why the session repeatedly returned to the same underlying idea: innovation must be multidisciplinary. Agriculture, ingredient science, flavour technology, nutrition, processing, microbiology, sensory analysis, regulation and market strategy all need to work together.
The next generation of free-from and enriched foods will therefore be less about isolated claims and more about integrated design. Products will need to answer several questions at once: What is removed? What is added? Why? How does it perform during processing? How does it taste? How is it digested? Is it affordable? Is it safe? Is it sustainable? Is it credible?
Conclusion: the future is designed, not declared
The webinar made clear that free-from and enriched foods are no longer a simple extension of dietary restriction markets. They are becoming a central testing ground for the future of food innovation.
The category reflects some of the most important tensions in contemporary food culture: health and pleasure, simplicity and functionality, naturalness and technology, tradition and precision, personal choice and physiological need.
The most successful products will not be those with the longest list of claims, but those in which claims are supported by real formulation intelligence. Removing sugar, gluten, lactose or fat is not innovation by itself. Adding protein, fibre, omega fatty acids or bioactives is not enough either. The real challenge is to design foods that work as complete systems — nutritionally, sensorially, technologically and commercially.
As the market evolves, FoodTech Village’s discussion showed that the future of free-from and enriched foods will depend on a deeper understanding of food architecture, targeted nutrition, sensory balance and ingredient functionality. In this landscape, the boundary between food science and market strategy becomes increasingly thin.
The next generation of functional products will not simply tell consumers what they contain or what they exclude. They will need to prove, through taste, structure, safety and nutritional relevance, that better food can be both more intelligent and more enjoyable.
